Spicy Lentil Patties

This recipe is quick, easy and tasty. Very filling though!

SPICY LENTIL PATTIES

Cook Time: 25 mins

INGREDIENTS
  • canola oil spray
  • 4 individual spring onions, ends trimmed, chopped
  • 2 clove garlic, crushed
  • 5g (1 tsp) ginger, finely grated
  • 1 whole fresh red chilli, deseeded, finely chopped
  • 20g (2 tbsp) fresh coriander, chopped
  • 1tsp ground cumin seed
  • 400g canned chickpeas, rinsed, drained
  • 300g lentils (green or brown), rinsed, drained *I used canned
  • 100g fresh rocket leaves (or mixed salad leaves)
INSTRUCTIONS
  1. Preheat oven to 190°C
  2. Heat a non-stick frying pan over medium heat. Spray with oil. Add spring onions, garlic, ginger and chilli. Cook, stirring until softened, about 5 minutes. Add coriander and cumin and stir. Transfer to a bowl to cool.
  3. Place mixture in bowl of food processor or blender. Add chickpeas and lentils and process until combined but not too smooth. Transfer to a bowl. Taste and season with salt and pepper. Shape mixture into four patties.
  4. Place patties on a baking tray and bake in oven for 15-20 minutes or until golden and cooked through. Serve with salad leaves.

So do you buy the lentils already cooked? Like in a tin or something. I've only seen them in little bags. Hmm, I like lentils but i've only ever used them in cooking once. This recipe sounds great though and I would love to try it.

I wondered about the lentils too whether they are pre-cooked. Recipe sounds delicious and will give it a go. I'm getting more in more into food like this rather than meat.

rightio, i am definitely going to make those, even if it means there will be a rather fragrant aroma in our house later in the evening, if you get my drift. the curse of the vegetarian household!

This sounds great. I haven't had lentils since my mum's terrible attempt at a lentil lasagne (during my vegetarian days) but I think this may sway my opinion.

Looks like a great idea for lunch to make in advance.

For anyone who hasn't bought tinned lentils before, they rock my world. Once my local Coles stopped stocking Edgels brown lentils, and I was getting DESPERATE. I went to the Central Coast to see my Mum and bought 47 cans from Woolworths up there! We would eat 2 cans a week...yes, they are pre-cooked, yes they are good for you. Yes...I'm OBSESSED. Rinse well, though.

oh yeah and abbout that biggest loser chick.i was kinda annoyed with her too,like you say there are thousnads and thousands who really wanted that opportunity, I feel like she should have thought about it better before she went in there.

But then I think it must have been damn hard to make that very unpopluar decision in front of australia,it took guts to go through with it,with everyone telling her she was making the wrong decision.

In the end it is her decision though,and i felt it was really arrogant of all the BL folk implying that she wasn't going to make it on her own.Thousands do,every day on their own (you did) and though i watch the show religiously,I wouldn't want to be on there either and i dont really buy into the concept either.I think the artificial environment they create for contestants on that show only sets them up for yoyoing later on.IMHO

I LOVE LENTILS!!!!! They're tasty and so good for you! I made the most delicious lentil salad the other day (can't remember if I told you) get one can of lentils, chopped walnuts, crumbled fetta, cherry tomatoes with lemon juice, olive oil, white vinegar and a dash of cumin - YUMMO

i love all things lentil & chickpea, tomorrow i'm making baked falafel salads with mint dressing but next week this one is definitely going on the menu!!!! deeeelicious :D
