HEALTHY COOKING CHALLENGEThis weeks challenge was Indian and it was much easier than I thought. This tasted quite nice. I don't like curry very much but the sweet potato complimented it really well.
JayKay, I know...what is with the rice! My man's got a weird sense of humour LOL.
SWEET POTATO & LENTIL CURRY
Serves: 4
Points: 5 ½ per serve
Prep time: 5 mins
Cook time: 20 mins
- 2 tbs Sharwood’s Rogan Josh Curry Paste
- 3/4 cup red lentils
- 2 bay leaves
- 1 onion, finely chopped
- 480g orange sweet potato, cut into 2cm cubes
- 1 tbs fresh ginger, grated
- 2 ½ cups chicken stock (made with stock cubes)
- 4 cups cooked basmati rice
- 1/4 cup coriander leaves
- salt and freshly ground black pepper to taste
- Heat a medium saucepan and add the curry paste. Cook, while stirring, for 1 minute or until fragrant.
- Add the lentils, bay leaves, onion, sweet potato, ginger and chicken stock. Bring to the boil and reduce the heat to low.
- Cover and simmer, stirring occasionally, for 20 minutes or until the sweet potato is cooked. Season with salt and black pepper.
- Place the cooked rice on 4 serving plates, spoon over the curry and scatter with coriander leaves.
You may want to soak the lentils a little before adding them. If you follow the recipe exact, they tend to be a little harder and I usually like my lentils softer. Bear in mind they will be boiled/simmered for 20 mins.

Not a huge lentil fan but that actually looks nice ... might try cooking that one at home as by boys have decided they love eating lentil curry at their grandparents house!

yummo!! How good does that look?? I just did my weekley shop last night and sorry - no lentils, but I will buy some next week and give it a go! I love sweet potato!!! I also love brown rice - It has a nice nutty flavour and as is sooo filling.
To go against the grain: I love lentils! This looks fab and I need to eat more of the little buggers so will def give this a go. It looks really quick which is exactly what I'm looking for.

Lentils are great, my mum got into trying allsorts of new recipies a while back, a lentil loaf was one of my faves, along with curried Kumara soup, mmmmmmmm
Gotta love a good curry especially in winter when all I crave is warm and yummy foods!

I am absolutely hooked on curry at the moment. You are giving us some very different recipes. Thankyou. (Have to leave out the coriander though, you know I was poisoned with it in a past life!).

You really are very adventurous with your cooking - wish I could drum up some enthusiasm to do some different dishes. I really can't be bothered when I get home although Al is doing most of the cooking while he is here which is just fantastic !!!! Then when he isn't I can't be bothered for just K and I !!!! Sad really.

I have no show with this one. Both my chaps are complete wimps about curry, and lentils would cause intense gagging noises!
It's the salts in the curry mix that make them go hard. I precook mine a little in boiling water, then add them later.
I'm a purist though, I love ghee in my curry... after having a few pints! :-D
